Hi All! I apologize that once again I failed to post for nearly two months. Things just get super crazy around the holidays! Anyhow, I'm back for good and super excited about 2013! Changing things a bit this year. Posting five days a week was getting a little crazy. Look for a new post every Wednesday.

Tuna Salad less the mayo..

Wanted to re-post my chicken salad less the mayo recipe and came across this tuna in olive oil can. Used the same recipe with this tuna and it turned out delish!

6 hard-boiled eggs

1 1/2 cups bread and butter pickles

3 stalks of celery, chopped

1 can tuna in olive oil

1 tbls. sweet pickle juice
1 tbls. mustard
2 tbls. sweet relish
1 tsp. hot sauce

salt and pepper to taste

Drain tuna. Place hard-boiled eggs (4 just whites and 2 with yolk if preferred for lighter recipe) and pickles in food processor until chopped well. Place egg mixture in bowl and add tuna, pickle juice, mustard, sweet relish, hot sauce and celery. Mix well and season to taste. Serve on bread, lettuce or rice cake. Enjoy!

Pumpkin Pie

One of my favorite loves of this time of year is that.........it's Pumpkin Season!!!! Obsessed with Pumpkin Pie, Pumpkin Bread, pretty much anything pumpkin. Stay tuned for some homemade recipe posts. Was recently in Susie's Cakes..(again!) and happened to try their version. Loved! Would definitely recommend if you need a pie! Happy Pumpkin Season!!

Been awhile since I've posted Jaxon's new shoes. He seems to grow out of his shoes quicker then they can get dirty. Grrr!!!! Lovin' Zara boys shoes this season. Placed an order for these yesterday.

McConnell's, Santa Barbara made ice cream is a definite must try. My most favorite flavor, Island Coconut. Delicious! Available at select Whole Foods. So not Paleo, but worth the treat. ;-)

Cauliflower Rice

I love rice and carbs!! Tried this alternative, Cauliflower fried rice and was quite impressed. Super delicious plain or feel free to add anything your heart desires. Just place Cauliflower in food processor. Place chopped Cauliflower in heated skillet with EVOO. Super delish and Paleo friendly.

Try it. You carb lovers won't be disappointed. 

Lunch Bots!

Recently was looking for some lunch ware for my little preschooler. Found these stainless steal, dishwasher safe containers. Super lightweight, unlike glass containers. Contains NO chemical leaking plastic. Get 'em here!

Peach Pepper Salsa

Loving this Peach Pepper Salsa! Taste great paired with eggs or meat if you like spicy. Paleo friendly for you Paleo go-ers.

1 Large Peach 

1 Anaheim Pepper

1 Bell Pepper (green)

2 Serrano Chili Pepper 

1/2 cup chopped cherry tomatoes

Cilantro

1 tsp. Cayenne Pepper

1 tsp. Ground Cumin

lime juice

Chop Peach, peppers and tomatoes. Add cilantro, spices and lime juice. Enjoy!!

Hi All,

Native Kicks

Thank you baseball fields for having dirt and water so accessible for my 2 year old!! I was forced to get Jaxon some new kicks after this past baseball filled weekend. He discovered how to make mud pies which = disaster!!! Love these bright and lightweight shoes for my little guy. Shop Native.

Current Obsession: Oatmeal Raisin Cookies

2 1/2 cups flour

1 cup sugar

1 cup brown sugar, packed

2 sticks Challenge butter

1 tsp. vanilla extract

3 eggs, beaten

1 tsp ground cinnamon

2 tsp. baking soda

2 cups rolled oats

1 cup raisins

Preheat oven to 350°. Combine beaten eggs, vanilla and raisins in small bowl, let soak and set aside. In large bowl, cream butter, sugar and brown sugar. Slowly sift flour, cinnamon, rolled oats and baking soda into sugar mixture, then stir in raisin mix. Spoon tablespoons on cookie sheet and bake for 10 minutes or until lightly browned. Enjoy!
